Veggie Cutlets


Cajun spiced Potato pakoras
Looking to participate in a recipe competition for anything fried!!!
I had broccoli, carrots and potatoes. my beloved boys don't particularly prefer Broccoli and weren't in the mood for carrots... so the King of all Veggies won our vote... starchy as they are... they make the best pakoras/fritters.
Cajun - which is mainly paprika, garlic, onion powder and some other spices is a family favorite... and so it had to added.... and that gave us the yummiest snack that I've made in a long time.

Ingredients:
2 medium potatoes
1 small onion
1tsp or less Cajun spice (i like McCormick)
a big pinch of turmeric, cumin and coriander powders
Parsley/Cilantro - Fresh, finely chopped - or a generous sprinkle of dried parsley
1/2 tsp Ginger-Garlic Paste
Salt to taste
1 tbsp Oil 
2 tbsp Milk
2 tbsp all purpose flour (maida) + 1-2 tbsp chickpea flour (besan)
Oil in a small to medium wok for deep frying.


Preparation
>Peal and grate the potatoes... Soak in warm water with a pinch of salt.
>Finely slice the Onion and put in a plate.
>Add the Flour, spices, oil and mix.
>Drain the potatoes, gently pat dry with a towel to take away some moisture
>Add the potatoes, mix well... Add the milk as needed.
>Add salt if needed.
>Keep the Oil to heat.
> Form flat patties, and drop them in the oil gradually.
>Flip them couple of times till they are golden brown.
>Drain onto a paper-towel.
>Serve hot with Ketchup or Coriander Chutney.
